My name is Sue Flay, and I work as the Sous Chef here at The Effingham. It was such a privilege and a challenge to be chosen to work under Russell Uppermeal and it’s an experience I’ll never forget. I can only hope that one day I will be able to be as successful as he was without compromising my integrity and commitment to making good, reasonably priced food.
